Healing leaky gut: day 1

It has been an interesting day. Going from snacking on Christmas food and cookies/candy to strictly following a diet, which includes only the best nutritious and anti-inflammatory ingredients. The transition is sure to take a few days to accept, even as I have prepared myself mentally for several weeks. This change also includes really planning the food, shopping and preparing. Throwing something random together half an hour before food is expected to be on the table will not work. But that doesn't mean that food will take a very long time to prepare, it just requires a little extra planning compared to before.


Breakfast

I started the day with herb meatballs and fried baby spinach. I had already prepared the meatballs yesterday, so I just heated them up in the pan with the baby spinach. Eating cooked food for breakfast is not something I'm used to. The meatballs smelled lovely and they were actually very tasty, even though it was early morning. Unfortunately, I had coffee abstinence after breakfast so I decided to have an early cup of espresso. I didn't feel like walking around with a headache all day.

Herb meatballs

Ingredients

1 kg high quality minced meat

2 tbsp fresh rosemary

2 tbsp fresh thyme

2 tbsp fresh oregano

1 teaspoon sea salt

1 tbsp coconut oil

Instructions

Mix the minced meat, salt and fresh herbs together in a bowl.

Form into meatballs and fry for 5-8 minutes per side in the coconut oil. They should be cooked through. Enjoy!


For a snack today I had apples and carrots. Easy to pack in the bag.


Lunch

The lunch took about an hour to prepare and I wished dearly as I stood in the kitchen that I had prepared it yesterday, so that it had just been to heat up today. I was starving before it was ready.

Turkey Cabbage Rolls

Ingredients

1 kg turkey mince

2 carrots

12 cabbage leaves

1 yellow onion

5 cloves of garlic

2 teaspoons turmeric

1.5 dl fresh coriander

salt and pepper

Instructions

Set the oven to 175 degrees. Boil the water and add the cabbage leaves for about 1 minute to soften them.

Grind the carrots, onion, garlic and coriander in a blender (or chop finely by hand). Mix the vegetables with the mince and turmeric. Add salt and pepper. Put some of the mixture in each cabbage leaf and roll up. Place in an ovenproof tray with the opening facing down. Add a little water and place in the oven for about 30 minutes. Enjoy!

The taste was great, but the consistency was poor. Next time I'll use more water when cooking.


Headache again. Another espresso. Didn't help much though. Didn't feel very good in the afternoon. Tired and stomach/back pain.


Dinner

Dinner was appreciated by all and my headache finally started to give way.

Pork tenderloin in the oven with honey and garlic

Ingredients

About 800 gr pork tenderloin

1,5 dl honey

5 cloves of garlic

2 teaspoons sea salt

Instructions

Set the oven to 190 degrees. Brown the pork fillet whole in a frying pan. Then place it in an ovenproof tray. Press garlic over it and sprinkle with salt. Pour the honey over the pork fillet. Put in a meat thermometer, place the pork fillet in the oven. When the thermometer reads 70 degrees, it is ready. Pour over the sauce that has formed. Let it stand for about 5 minutes before slicing. Enjoy!

Incredibly easy to prepare. I served my pork tenderloin with oven roasted asparagus and spring onions and roasted baby spinach. Very tasty!


Tomorrow I'm going to cut down on the coffee to one cup. Then I'll have to do without coffee for 30 days!

On the far left is the unsweetened almond milk and on the far right is Dad's orange juice...

    Have you ever felt butterflies in your stomach or a lump in your throat? Do you ever get a special feeling in your stomach when you meet someone you like or don't like? Has your stomach told you whether something is right or wrong for you?

    The stomach can be seen as a source of your intuition. Gut feeling is actually not just nonsense! There are now scientists who insist that we humans have two brains, one of which is located in the stomach (you probably know where the other one is located)! The "brain" of the stomach is located under the outer lining and between the muscular layers of the oesophagus, stomach lining and intestines and is better known as the enteric nervous system (ENS).

  • Healing leaky gut: day 2


    Day 2 is over. It started off badly, with a really disappointing breakfast and then ended with a super good dinner. My stomach has been extremely bloated during the day and was really sore after lunch. I know I'm sensitive to coconut products, but have decided to keep these in my diet for at least the first week. If my stomach continues to fuss, I will remove these products as well. I don't usually have stomach pain, but I do have other symptoms of a leaky gut which I will describe in more detail in a separate blog post.

  • Healing leaky gut: day 16


    It was a day off today. My son is feeling unwell. Good thing I had leftovers in the fridge. For dinner, I managed to make a very tasty and easy salmon with mango salsa. I'm hoping for a speedy recovery, have boosted him with probiotics, fresh fruit (kiwi and oranges) and tea and manuka honey. It should work wonders!

    A few weeks ago, our youngest child started complaining that she had a sore throat and my first thought was: "Oh, no, not now!" I really didn't feel like everyone in the family was going to get sick and in the event of a sore throat also have to take antibiotics!
