It was a day off today. My son is feeling unwell. Good thing I had leftovers in the fridge. For dinner, I managed to make a very tasty and easy salmon with mango salsa. I'm hoping for a speedy recovery, have boosted him with probiotics, fresh fruit (kiwi and oranges) and tea and manuka honey. It should work wonders!

Baked salmon with mango guacamole
Ingredients
800 gr salmon
1 tbsp olive oil
2 tbsp fresh or 2 tsp dried thyme
2 tbsp fresh or 2 tsp dried basil
1 lemon
Salt and pepper
Mango guacamole
2 avocados
1 mango
0.5 dl fresh coriander
½ st lime
Salt and pepper
Instructions
Place the salmon in an ovenproof tray. Pour over the oil, grated lemon zest, thyme, salt and pepper. Put in the oven at 200 degrees for about 20 minutes, until the salmon is no longer red in the middle and instead falls apart easily when cut with a fork. Squeeze the lemon juice over the salmon if desired.
Meanwhile, make the mango guacamole. Mash the avocado in a bowl. Cut the mango into small cubes and mix with the avocado. Add the juice of ½ lime, salt and pepper. Leave in the fridge until the salmon is ready. Enjoy!
I love fish and especially when it is this easy to prepare. The kids are not very fond of fish in general, but together with gluten-free pasta it worked well today.
