What a great day it was! We were spontaneously invited to good friends and she is a master in the kitchen! Dinner was a delight as always when she cooks authentic Pakistani food from scratch. The food is not spicy, but tasty. We had a busy Saturday, so leftovers were the basis for lunch. That castle steak never ends...

Day 13 - A real home day
A day of planning and action. It takes time to sit and search through recipes and also find something that feels good and meets the criteria I have right now on my diet. But now I'm charged up for next week and I know there will be some real highlights on the dinner table.

Steak salad with bacon and squash

1 handful of mixed salad
10 black olives
½ dl dried cranberries
10 cm cucumber
Olive oil
Salt and pepper

Dinner
Fish tacos with mango salsa
Ingredients
For the salsa:
1 mango
1 avocado
1 clove of garlic
1 lime
⅛ teaspoon salt
For the fish tacos:
½ tsp sea salt
¼ tsp ginger
¼ tsp garlic powder or 1 clove of garlic
1 tbsp avocado oil
400 g cod fillet
4 cabbage leaves
2,5 dl salad
1 lime
10 cm cucumber
Instructions
Peel and cut the mango and avocado into small pieces. Mix all the ingredients for the salsa in a bowl. Put in the fridge while the fish is being cooked.
Cut the cucumber into small pieces and place in a bowl. Place the salad in another bowl.
Dry the fish fillets. Mix the sea salt, ginger and garlic in a small bowl. Toss the fillets in the spice mixture. Fry the fish in the oil for about 5 minutes per side or until it falls apart easily. Place in a bowl and squeeze the juice of a lime over it.
Fill a cabbage leaf with fish, lettuce, cucumber and salsa. Enjoy!
Wow, that was good! Definitely the tastiest thing I've cooked these days! The food went down well with the eldest daughter and husband too. The little ones weren't so keen though.
