Today I have felt stressed. Stressed that everything is taking so long. That I feel like I have no time for anything. That the list of things that need to be done never ends. Well, you understand and recognise that feeling, I guess. I've had a planning day. I've put together the menu for the week and shopped for what I need until Friday. Tomorrow's schedule includes cooking.

My stomach is in a bad way, so from today I am removing all coconut products from my diet.

Lunch

Cauliflower salad with bacon

Ingredients

1 head of cauliflower

2 dl black olives

1 large lemon

2 slices of fried bacon

Olive oil

Fresh mint

Salt and pepper

Instructions

Cut the cauliflower into small pieces and cook for about 8 minutes. It should be chewy. Rinse the cauliflower under cold water. Cut the olives into small pieces. Cut the bacon into small pieces. Grate the peel of the lemon. Mix everything in a bowl. Squeeze over the lemon juice, add the olive oil, mint, salt and pepper to taste. Mix well. Enjoy!

Good easy lunch, an absolute advantage is if you already have pre-cooked bacon at home, which I had. Had a glass of freshly squeezed orange juice with it. It was perfect.
