▼TL;DR: Healing My Gut, One Meal at a Time
On day 7 of my gut-healing journey, I'm feeling stressed and impatient, but I'm determined to stick to my plan. This article explores my daily food choices as I work to repair my "leaky gut," including a delicious cauliflower salad with bacon for lunch and a repeat of pulled beef with citrus cauliflower for dinner. I've also removed coconut products from my diet due to stomach issues, and I'm focusing on nourishing meals like cucumber and avocado soup, banana, apple, and fresh berries to support my gut health.

Today I have felt stressed. Stressed that everything is taking so long. That I feel like I have no time for anything. That the list of things that need to be done never ends. Well, you understand and recognise that feeling, I guess. I've had a planning day. I've put together the menu for the week and shopped for what I need until Friday. Tomorrow's schedule includes cooking.
My stomach is in a bad way, so from today I am removing all coconut products from my diet.
Breakfast
Cucumber and Avocado Soup

Snacks
Banana
Lunch
Cauliflower salad with bacon
Ingredients
1 head of cauliflower
2 dl black olives
1 large lemon
2 slices of fried bacon
Olive oil
Fresh mint
Salt and pepper
Instructions
Cut the cauliflower into small pieces and cook for about 8 minutes. It should be chewy. Rinse the cauliflower under cold water. Cut the olives into small pieces. Cut the bacon into small pieces. Grate the peel of the lemon. Mix everything in a bowl. Squeeze over the lemon juice, add the olive oil, mint, salt and pepper to taste. Mix well. Enjoy!

Good easy lunch, an absolute advantage is if you already have pre-cooked bacon at home, which I had. Had a glass of freshly squeezed orange juice with it. It was perfect.
